What I love about summer is eating outside. Food tastes better and people are happier. Light dinner accompanied with light beer will be a great background for lively conversations.
Here is my recipe for cozy summer evening with friends: chicken salad with grilled veggies (portion for 4):
4 chicken breast cut into medium pieces and marinated for min. 1 hour in olive oil mixed with 1 tea spoon of freshly grated ginger, salt and pepper. Grill chicken until it is done - ca. 20 - 25 min. depending on how thick they are.
Thinly sliced 1 squash and 2 pepper fruits  (yellow and red) place them on grill tray, spice it with salt and pepper and 2 table spoons of olive oil. Grill veggies for 15 min.
While veggies and chicken are on grill, prepare salad: mix different types of lettuce, e.g. rucola with romaine lettuce, slice thinly 8 medium tomatoes, 1 cucumber and 8 radishes. Mix them in a large bowl.
Now it is time to prepare delicious green pea pesto. I have serious weakness for pesto and was experimenting lately with different versions of it. One of my favorites is green peas pesto because it is very light and fresh. It goes well on your bread or as a salad dressing.
To prepare the green peas pesto you need: 500 g. fresh green peas (I don’t recommend using frozen peas simply because you will not get the fresh and light taste), 3 table spoons of olive oil, 2 small cloves of garlic, 3-5 fresh basil leaves salt and pepper. Mix all ingredients with blender. 
Place grilled veggies in the salad bowl and blend it thoroughly with the green peas pesto. It will look so colorful and appetizingly. Place chicken pieces on the top. 
Serve cold India Pale Ale which lightness and flowery scent goes well with light salad and chicken. Enjoy!

Delicious omellet for dinner
It took quite time to convince my husband that omellet tastes good. Some bad experience form past made him believe it is boring dish. There are plenty of ways to prepare it, here is my suggestion that convinced my husband that omellet can be quite delicious and goes well as a light dinner.
(portion for 2 persons)
Mix lightly 6 eggs, salt, pinch of cayenne pepper and chopped handful of fresh basil leaves in the bowl. Don’t whisk it too violently. 
Slice 1 medium squash, 3 cherry tomatoes, 1 small onion, chop thinly 1 small chilli pepper (it is up to you how spicy you want your omellet to be)  and  2 cloves of garlic, salt and pepper. Fry veggies on the frying pan for 5 minutes on high heat. Use 1 spoon of organic rapeseed oil to fry veggetables. 
Warm up the frying pan on a medium heat, melt a knob of butter on a pan and pour the eggs into the pan. Let it fry for 3 minutes and then spread on the top of eggs the fried veggetables. Cook it until the eggs on the top begins to set. Decorate with fresh rucola and basil leaves. Omlette is ready to serve! And I can assure you, it is tasty.
